Homemade Additive-Free Green Curry — Delicious Food for Better Brain Performance

Make Your Own Food to Boost Brain Performance!

Today, I’d like to introduce a homemade additive-free green curry made with familiar leafy greens and herbs, without using store-bought green curry paste.

Ingredients

Ingredients

  • Any strongly scented leafy greens
    (Shiso leaves, celery, red leaf lettuce, basil, or any other herbs)
  • Chicken, as needed
  • Bell pepper
  • Eggplant
  • Garlic
  • Butter
  • Milk
  • Yogurt
  • Cashews
  • Additive-free chicken stock ※This is the easy version.
  • Fish sauce
  • Salt

Preparation

  1. Prepare the cashews
    Soak the cashews in water overnight. Once they have softened, grind them finely in a grinder.
  2. Make the green paste
    The green paste is made with strongly scented leafy greens.
    Shiso leaves, celery, basil and other herbs, red leaf lettuce—anything is fine.
    Cook the leafy greens in additive-free chicken stock. Once they are soft, blend them in a blender.

Your homemade green paste is now ready.


How to Make the Curry

  1. Sauté the garlic, chicken, and vegetables
    Sauté the garlic in butter. Once it becomes fragrant, add the chicken, bell pepper, and eggplant and continue cooking.
  2. Add the additive-free chicken stock and green paste
    Once the ingredients are cooked, add the additive-free chicken stock and the green paste you prepared earlier.
  3. Add the milk, yogurt, and cashews
    Add the milk, yogurt, and ground cashews.
  4. Season to taste
    Finally, season with salt and fish sauce, and it’s ready!

Even if you feel it needs a little more sweetness, please don’t add sugar.
